Weekly Newsletter...

Hey Everyone! It is our official first newsletter of the new year! Happy 2009 everyone! I'm sure it will take me 3 months to remember that it is actually 2009 when I am writing the date on anything! I pray that you all had a wonderful Christmas season. It went by so fast and I am sad that it is over, but I am ready for a new year full of fun! I am actually starting the new year off right by traveling to Disney World in Florida! Yep, I leave on Friday. I am so excited!!!! Don't fear though, Kira's Cottage Christian Store will still be open, but the hours will be a little different next week. ( will talk about that later...) Kim Hunter and Wendy are going to be here, so you will get wonderful service!

On that subject, if you come into the store in the next couple of weeks, expect it to be a little messy! We are taking down everything after Christmas and rearranging everything, so my apologies! I am always very self concious of the store right after Christmas. It always seems to be a long process to get it cleaned up!

I also want to note that on days that our area gets bad weather, call before you come in. I live out in the country, and everyone else that works here doesn't live close by either, so if Franklin Schools has a two hours delay, the store may not open until 10am. Safety of us and our employees comes first!

Check out our healthy recipe at the bottom of this page. After I get home from our vacation, I am going on Weight Watchers, so I am going to start posting healthier recipes now. Don't worry though, every now and then I will throw in a bad for you recipe too!!!

Tastefully Simple Party

Ok, by the end of January, I have a feeling that most of us will be ready for something different to do. I am not a big fan of winter. It is dreary and January really is my least favorite month! So, I am planning a Tastefully Simple Party at Kira's Cottage Christian Store on

RECIPE

Quick and Cheesy Quesadillas
For a snack that's warm and cheesy, combine whole grain tortillas and cheese. Great to split with someone else!

Four 6-8-inch whole wheat tortillas
2/3 cup low-fat, shredded Colby, Monterey Jack, or Cheddar cheese
1/4 cup fat-free refried beans (optional)
Salsa (optional)

Directions:
If using refried beans, spread half of the 1/4 cup on one tortilla with a table knife. Place the tortilla, bean side up, in a skillet at medium heat. Sprinkle half of the cheese over the tortilla. Top with 1 plain tortilla.
Cook over medium heat about 3 minutes, or until cheese begins to melt. Use a pancake turner to heat the other side. Repeat with the remaining tortillas, refried beans, and cheese. Cut each quesadilla into 6 triangles. Serve with salsa, if you like.
