Spring is tomorrow! YAY! I am so happy. I am not a winter person. I am thankful for each and every day, I just like each day to be warm! I pray that we all have a blessed Spring. Spring is always a time for new beginnings. New flowers grow, new leaves bud, new animals are born. It is a wonderful time! Thank You, Lord, for the beautiful Spring!

Spring Fling

Don't forget to mark your calendars for next weekend's Spring Fling at Kira's Cottage Christian Store! We just decided to make this a two day Sale event where everything in the store on Fri. March 27 & Sat. March 28 will be at least 20% off!!! For those of you bringing non perishable food items to help out Human Services, you will get 30% off the number of items you bring. Don't forget to wear your Easter bonnets to be entered into a drawing for a $25 gift certificate! We will wear ours too (and I will post a pic on the website!)

HG's Death by Chocolate Cupcakes
To Die For!

Since I am on Weight Watchers, I am always looking for something sweet to help curb my cravings. Hungry Girl has really come in handy! I found this recipe on her website this week. Everything I have tried of hers is awesome, so I look forward to trying this VERY soon!

Ingredients:

2 cups moist-style chocolate cake mix (half of an 18.25-oz. box)

Two 25-calorie packets diet hot cocoa mix

1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)

2 tbsp. semi-sweet mini chocolate chips

1 tsp. Splenda No Calorie Sweetener (granulated)

1/8 tsp. salt

Directions: Place chocolate chips and the contents of both cocoa packets in a tall glass. Add 12 ounces of boiling water, and stir until chips and cocoa mix have dissolved. Place glass in the freezer to chill for 25 minutes. Preheat oven to 350 degrees. Once cocoa has chilled, give it a stir, and mix with all other ingredients in a mixing bowl. Whip batter with a whisk or fork for 2 minutes. Spray a 12-cup muffin pan with nonstick spray, or line it with baking cups. Evenly spoon batter (which will be thin, but don't worry, your cupcakes will puff up!) into the pan. Place pan in the oven, and bake for 15 minutes. Cupcakes will look shiny when done. MAKES 12
