Cinnamon, Spice and Everything Nice Chicken

Enjoy a healthy and hearty dinner that’s family and figure-friendly. Cinnamon, Spice and Everything Nice Chicken is a simple and savory meal—perfect for a winter’s day. Now that’s one New Year’s resolution that’ll be easy to keep…and make!

1 whole roasting chicken, divided
1 leek, rinsed and sliced
2-3 crisp apples, rinsed and sliced
2 sweet potatoes, peeled and cubed
1 cup plain fat-free yogurt
2 tsp garam masala
1 tsp cinnamon
Olive oil
In the evening or morning prior to eating, remove chicken giblets, and rinse the chicken inside and out. Remove any excess fat and pat the outside dry.
Fill a gallon freezer bag with yogurt, garam masala, and cinnamon. Add chicken, close bag and mix. Place in the refrigerator to marinate.
To cook, preheat the oven to 425 degrees F. Place sliced apples, sliced leeks and cubed sweet potatoes in a roasting pan. Toss with salt, pepper, and olive oil. Place marinated chicken on top. Cook in the oven for 1 – 1½ hours or until chicken is done and vegetables are tender.
